When most people think of sushi, they usually picture the seaweed-wrapped rice and fish rolls. However, if you'd like to make sushi without seaweed, try something unique. You can cut a thin piece of cucumber and use it as a casing for a delicious sushi filling. You can also use a soybean peel, which comes in a variety of fun colors. Whatever you choose, you are sure to prepare unforgettable sushi without the plain seaweed skin around it.

Ingredients

Tuna roll wrapped in cucumber

  • 1 cucumber
  • 1 small piece of fresh tuna
  • 2 slices of avocado
  • 1 dollop of wasabi
  • 1/2 teaspoon of mayonnaise, yogurt, or mascarpone
  • Garnish (grated daikon and carrot, small salad leaves, soy sauce, fish eggs)

Avocado roll wrapped in soy

  • 1 soybean pellet
  • 150 grams of cooked pink Himalayan rice (or white sushi rice)
  • 4 or 5 slices of avocado
  • Garnish (carrot and cucumber slices, wasabi, pickled ginger and soy sauce)

Method 1 of 2: Make a tuna roll wrapped in cucumber

  1. Place the ingredients on the cucumber slice. Unfold the cut cucumber on the cutting board. Place the tuna slices on one end of the cucumber. Place the slices next to each other, but make sure they don't overlap. Place two slices of avocado in the center of the tuna and spread a dollop of wasabi on a slice of tuna next to the avocado.
    • The tuna should cover about a third of the cucumber slice.
  2. Garnish and serve the roll. Place the slices of tuna and cucumber on a plate. You can put fish eggs on top of the slices for some extra color. Consider garnishing the cucumber tuna roll with the following:
    • Grated daikon
    • Grated carrot
    • Small salad leaves
    • Soy sauce

Method 2 of 2: Make an avocado roll wrapped in soy

  1. Cover half of a soybean sheet with rice. Lay a bamboo sushi mat flat on a cutting board. Place a soybean sheet on the mat. Wet your hands and place 150 grams of cooked pink Himalayan rice or regular sushi rice on one half of the soybean sheet. Use your fingertips to spread the rice evenly on the half closest to you.

    Do not push the rice. Instead, make sure to spread the rice evenly on the sheet.


  2. Garnish and serve the sushi roll. Place the slices of avocado roll on a serving plate. Consider placing carrot and cucumber slices next to the roll. Put a dollop of wasabi on the serving plate and put some pickled ginger next to it.
    • Serve soy sauce with the sushi roll.

  • Soy skins have no flavor and are sold in a variety of colors such as pink, green, yellow and blue.
