Apricot is a small fruit with sweet flesh and a stone inside. You can dry an apricot at home using an oven or electric dryer. Also, dried apricots can be used to make great snacks or use in other dishes.

Method 1 of 2: Drying Apricots in the Oven

  1. 1 Buy ripe fruit. Unripe apricots can turn sour during drying. If they grow nearby in your area, then you need to wait until the end of the season. Then they can be used immediately after assembly.
  2. 2 It is advisable not to miss the sale at your local supermarket. Usually ripe fruits start selling out between July and September.
  3. 3 To make the apricots ripe, you can place them outside the window in a bag. To prevent the fruit from overripe before drying, they can be kept in the refrigerator, but no more than a week.
  4. 4 Further, the apricots need to be thoroughly washed and get rid of the spoiled ones. Soak in water for a few minutes to wash off any dirt, then rinse with clean water.
  5. 5 For further actions, you need to remove the bone. To do this easily, you just need to cut the apricot in half, right along the seam.
  6. 6 Turn the fruit inside out. Press down on the center just enough to expose most of the pulp. This makes the apricot easier to dry.
  7. 7 Line a baking sheet with parchment paper. If there is a large wire rack, it is better to place it above the baking sheet, this can shorten the drying time.
  8. 8 Spread the apricot halves evenly on the baking sheet. Make sure they don't touch each other.
  9. 9 Preheat the oven. Apricots are dried at a temperature of 79C, do not heat it above 93C.
  10. 10 The intervals should be large between levels in the oven.
  11. 11 Wait 10-12 hours. Turn the halves over to dry well. When the apricots are done, they will become a little tough.
    • Cooking times may vary. It all depends on the size of the fruit and the temperature in the oven. Of course, drying will take less time if dried at 79C than at 64C.

Method 2 of 2: Drying Apricots in an Electric Dryer

  1. 1 Choose ripe apricots. Wash them in clean water, just like in the first method.
  2. 2 Remove the pits by cutting the fruit in half as described above.
  3. 3 Separate the halves and turn them inside out, but leave the skin on. Press in the middle until the pulp comes out.
  4. 4 Remove the baking sheet from the dryer. Place the inverted apricots on top of it. Make sure there is enough space for air between the halves.
  5. 5 Place the baking sheet in an electric dryer and set the temperature to 57C. Read in the instructions which mode this temperature corresponds to.
  6. 6 Wait about 12 hours or until the timer turns off. Large apricots take much longer to dry.
  7. 7 Store dried apricots in glass jars. Place them in a cool, dark place like a closet. Dried apricots can be stored in this form for several months.

Tips

  • Separate large apricots from small ones and dry one at a time. Since some may dry out, while others will accumulate too much moisture and rot.
  • You can re-dehydrate fruits by keeping them in fruit juice for 2-4 hours. They are used well in recipes that require fresh fruit.
  • Give your dried apricots a sweet flavor. Dissolve lemon juice and honey (4 tsp) in water (1 cup). Before drying, accordingly, soak the fruit in the resulting liquid for a few minutes.
