If you like homemade desserts you should try making your own lemon meringue cake ... you just need to make the lemon portion.
Ingredients
- 1 cup of sugar
- 1 tablespoon cornstarch
- 1/4 teaspoon salt
- 2 glasses of water
- 3 eggs, divided
- 2 tablespoons butter
- 2 teaspoons grated lemon peel
- 1/3 cup lemon juice
- 6 tablespoons of sugar
- Baked Pie Base
Steps
1 Combine sugar, cornstarch and salt. Add a little water, stir until smooth and add the rest of the water. Simmer over moderate heat, stirring constantly with a whisk or wooden spoon, until the mixture boils.
2 Reduce heat and continue simmering for about 1 minute, stirring constantly.
3 Whisk the yolks. Add a small amount of the hot mixture to the yolks. Mix the mixture well and pour into a saucepan to the rest of the mass.
4 Cook over low heat until thickened, about 2 minutes, stirring constantly. Add butter. Mix everything well, then refrigerate.
5 Add lemon zest and juice and stir well. Cover and cool to room temperature.
6 Preheat oven to 325 ° C.
7 Make a meringue: Whisk 3 egg whites with a pinch of salt until foamy. Continue whisking and add 6 tablespoons of sugar, one at a time. The meringue is done when the mixture on the tops is stiff.
8 Place the lemon cream in the cake base. Spread the meringue with a spoon over the entire surface of the base.
9 Leave it on for 15 minutes.
10 Refrigerate before serving.
Tips
- Use cane sugar for the best taste.
