Rasam soup plays an important role in the traditional cuisine of southern India. In the southern states of this country, there are many different recipes for making rasam soup.It is believed to improve digestion as all of its main ingredients have medicinal properties.
Ingredients
- 1 medium tamarind (about the size of a gooseberry)
- 1 medium tomato
- 1 teaspoon pepper
- 1 teaspoon cumin
- 3 medium dried chili peppers
- 4 cloves of garlic
- 1 pinch ground turmeric
- 2 teaspoons vegetable oil
- 1 teaspoon mustard seeds
- 1 curry sprig with leaves
- 3 sprigs of coriander with leaves
- Salt to taste
Steps
- 1 Soak tamarind in water (1.5 cups) in a small bowl, add a pinch of turmeric and some salt.
- 2 Juice the tamarind, strain it and set aside for now.
- 3 Chop the tomato and add the resulting puree to the tamarind juice.
- 4 Grind the cumin, garlic and one red pepper in a mill to make a powder.
- 5 Pour oil into a frying pan and put on fire, add mustard seeds. Once the seeds are cracked, add 2 chili peppers and curry leaves.
- 6 Add tamarind juice with tomato.
- 7 Add ground spices and salt to taste.
- 8 Bring the mixture to a boil over low heat.
- 9 It is important to remove the mixture from the heat as soon as it starts to foam, as it will taste bitter if it continues to simmer.
- 10 Garnish the soup with coriander leaves.
- 11 Enjoy the taste of rasam soup!
