The chemical reactions between baking soda, baking powder, and vinegar make it easy to make a puffy and flavorful dough. You can make a yeast-free pizza dough or soda bread. You can quickly make bread from this dough if you add buttermilk and seasonings to your taste.

Ingredients

Yeast-free pizza dough

  • 2 1/2 cups (350 grams) premium wheat flour
  • 2 3/4 teaspoons (10 grams) baking powder
  • 1 teaspoon (7 grams) salt
  • 1 tablespoon (15 ml) vegetable oil
  • 3/4 to 1 cup (180 to 240 milliliters) water

  • 2 cups (240 grams) premium wheat flour
  • 1/2 cup (100 grams) white sugar
  • 1 1/2 teaspoons (6 grams) baking powder
  • 1/2 teaspoon (3.5 grams) baking soda

  • 1 cup (240 ml) buttermilk
  • 1 large egg
  • 1/4 cup (55 grams) unsalted butter
  • Possible additives (such as dried fruit, spices, cheese, or herbs)

Yeast dough for soda bread

  • 4 cups (480 grams) flour
  • 1 tablespoon (20 grams) sugar
  • 1/2 tablespoon (6 grams) baking powder
  • 1/2 tablespoon (10 grams) baking soda
  • 1 1/2 cups (350 ml) water
  • 2 teaspoons (10 ml) vinegar, apple cider or white
  • 1 tablespoon (15 grams) ghee

Method 1 of 3: Lean Pizza Dough

  1. 1 Stir dry ingredients thoroughly. Place 2 1/2 cups (350 grams) of premium wheat flour in a bowl. Add 2 3/4 teaspoons (10 grams) baking powder and 1 teaspoon (7 grams) salt. Stir the ingredients for about 30 seconds to distribute the baking powder evenly.
  2. 2 Add vegetable oil and water. Pour in 1 tablespoon (15 ml) sunflower or olive oil and 3/4 cup (180 ml) water. Stir the pizza dough until it looks like a ball. If the flour absorbs water well, you may need another 1/4 cup (60 milliliters) of water.
    • Add extra water 1–2 tablespoons (15–30 ml) at a time. Do not add too much water or the dough will become sticky.
  3. 3 Knead the dough. Sprinkle some flour on the table and dip the pizza dough in it. Knead the dough for 3-4 minutes, until smooth and firm.
    • You can knead the dough the way you like, the main thing is to constantly stretch and fold it again. This will release gluten from the flour.
  4. 4 Shape the dough to the desired shape. You can roll out the dough with a rolling pin, or place it in a pizza pan and flatten it along the bottom. Note that if you use all the dough for one pizza, it will be quite thick.
    • If you want to make two pizzas with thinner layers, simply divide the dough in half and roll them out to the desired thickness.
  5. 5 Add the filling and bake the pizza. Preheat oven to 200 degrees Celsius. Cover the crust with the sauce, pesto, or vegetable oil and sprinkle with the filling of your choice. Bake the pizza for 15 to 25 minutes.

  1. 1 Preheat the oven and prepare the baking dish. Preheat oven to 180 degrees Celsius and sprinkle cooking spray on a bread pan (a 23 x 13 centimeter pan will work). This is to prevent the bread from sticking to the mold.

    • If you don't want to use butter, you can substitute the same amount of olive oil or sunflower oil.
  4. 4 Mix liquid and dry ingredients. Transfer the liquid mixture to a bowl of dry ingredients. Stir everything gently with a rubber spatula until a homogeneous mixture is obtained.
    • If you are going to add anything else, you can leave some dry mixture in the dough.
  5. 5 Add flavorings if desired. You can easily add a sweet or savory flavor to your bread. To do this, simply put the selected additives into the dough and stir it a little more. You can use up to 1 1/2 cups (350 ml) dried fruits or nuts, or add seasonings and spices to taste. The following supplements work well:
    • fruits: cranberries, dried cherries, apples, blueberries, orange peel, raisins;
    • nuts: walnuts, pecans, almonds;
    • herbs and spices: dill, pesto sauce, cumin seeds, ground pepper, ground garlic;

  6. 6 Bake some bread. Place the yeast-free dough on the prepared bread pan and place in the preheated oven. Bake the bread for 45-50 minutes. To check if the bread is ready, poke a toothpick into the center of the loaf. If the bread is baked, the toothpick will stay clean. Remove the bread from the oven and wait 15 minutes for it to cool in the pan. Then remove the bread from the mold and serve.
    • Although instant bread is best eaten fresh, it can be stored for several days in a tightly tied bag.

Method 3 of 3: Lean Soda Bread Dough

  1. 1 Preheat the oven and remove the baking sheet. Heat the oven to 200 degrees Celsius. Remove the baking sheet or pizza dish and set it aside for now.
    • You do not need a special baking pan, as soda bread can be freeform.
  2. 2 Mix dry ingredients. Measure out all dry ingredients and combine in a large bowl. Stir until smooth. You will need the following:
    • 4 cups (480 grams) flour
    • 1 tablespoon (25 grams) sugar
    • 1/2 tablespoon (6 grams) baking powder
    • 1/2 tablespoon (10 grams) baking soda
  3. 3 Add water and vinegar to the dry mixture. Make a depression in the center of the dry mixture and pour 1 1/2 cups (350 ml) of water and 2 teaspoons (10 ml) of vinegar into it. Take a rubber spatula or wooden spoon and stir until you have an airy dough.
    • You can use both white and apple cider vinegar for this recipe.
  4. 4 Knead the dough. Sprinkle some flour on the table and place the prepared dough on top of it. Knead the dough for 3-4 minutes until smooth and firm.
    • You can knead the dough the way you like, the main thing is to constantly stretch and fold it again. This will release gluten from the flour.
  5. 5 Shape the soda bread to the desired shape. Line the dough by hand until it is in the shape of a round disc, about 4 centimeters high. Place the disc on a baking sheet. Use a sharp knife to draw two crossed lines over the loaf in an 'X' shape.
    • The 'X' lines should be deep enough to reach almost to the base of the loaf. They are necessary for steam to escape from the dough. As a result, you will have a standard shape soda bread.
  6. 6 Bake yeast-free soda bread. Place the dough in a preheated oven and bake the bread for 30-40 minutes. This will make the bread crunchy and quite firm. Gently remove the bread from the oven and brush with one tablespoon (15 grams) of ghee. This will improve the flavor of the bread and soften the crispiness.
