Method 1 of 2: Making the dough

  1. 1 Mix the above ingredients. Pour warm water into a bowl and add yeast, then salt, sugar and butter. Add flour gradually while stirring the mixture. You have added enough flour if the dough is so thick that it is difficult to mix.
  2. 2 Knead the dough. The dough is done if it is glossy and firm, but not sticky; and a small amount of dough can be pinched and stretched quite thinly, to a translucent layer.
  3. 3 Let the dough rise for an hour at room temperature or 5 hours in the refrigerator.
  4. 4 Place the dough on a floured surface and sprinkle with flour.
  5. 5 Cut the dough into two round balls and repeat the following steps separately for each one.
  6. 6 Roll one ball by hand to a thickness of 2-4 cm.
  7. 7 Take a pancake of dough and pinch the edges about 1.3 cm. from the edge. Check and stretch as you pinch, repeat around the entire circumference.
