Resources

Vegetarian biryani rice

  • 4 cups of basmati rice
  • 3 tablespoons garlic ginger sauce
  • 5 green peppers (or less, depending on taste)
  • 1 chopped onion
  • 2 chopped tomatoes
  • 2 teaspoons each of cinnamon, clove and cardamom spices
  • Cashew
  • 4 tablespoons cooking oil or ghee butter
  • 2 cups chopped beans and carrots
  • 2 teaspoons of Garam Masala powder
  • 3 teaspoons chili powder (or less, depending on taste)
  • Mint leaves and coriander (a handful)
  • Juice of half a lemon

Steps

Part 1 of 2: Prepare the ingredients

  1. Wash basmati rice. You need to rinse the rice before you start cooking. Fill a bowl of cold water and fill it with rice. Use your hands to turn the rice in one direction. Drain the cloudy water and fill the bowl with other water. Continue rinsing until the water is clear.
    • Rinsing the rice is to remove the starch from the outside of the grain and any debris.
  2. Soak rice. You need to soak the rice after washing it. Pour the rice into a bowl of cold water and soak it for 30 minutes to 2 hours. The rice kernels will swell and fluffy after soaking.
    • You can soak the rice in the water you plan to use for cooking. If so, the amount of water would have to be 1.25 times more than the amount of rice. With 2 cups of rice, you will need 2 and a half cups of water.

  3. Cut the vegetables into small pieces. If using vegetables such as carrots, beans, tomatoes, and cauliflower, cut them into small pieces. Make sure to wash the vegetables and place them on the side to add them to the rice. advertisement

Part 2 of 2: Cook biryani rice

  1. Heat oil in a pan over medium heat. Place the cloves, cardamom and cinnamon in a pan. Stir for a few seconds, then add onions. Stir fry until onions are clear.
    • Add the tomatoes and cashews to the pan when the onions are clear.

  2. Add mint leaves, coriander and green peppers to the pan. Stir fry for about 1 minute, then add garlic ginger sauce. Stir the mixture in a pan and fry for another 2 minutes.
  3. Add garam masala powder, chili powder, carrots and beans. Stir continuously for a few minutes.
  4. Pour another 8 cups of water. Add water to the pan and season with salt to taste. Mix all ingredients well and boil the mixture.
  5. Put the rice in the pan. Pour rice into boiling water. Add more lemon juice and cover the pot. Cook until rice is cooked.
    • When cooked, the rice seeds must be firm without being crushed.
    • When checking the rice, be sure not to stir it to avoid crumbling the grains
    • Add water to the pan if you feel the water is too low. Cover the pot and continue cooking.
  6. Serve food. The biryani rice is served hot. You can try serving biryani rice with curries or other delicious Indian main dishes. advertisement
