This Japanese version of our well-known Indonesian nasi goreng (fried rice) or nasi is based on boiled rice that is stir-fried with eggs, vegetables, soy sauce and possibly extra seasonings. Because you can store all kinds of different vegetables, meat and vegetarian protein-rich ingredients, this can be a handy dish for using leftovers. In Japan they use a so-called hibachi to make nasi. A hibachi is a type of large, flat, open grill plate. But it also works very well in a wok or large frying pan. Follow the steps below and you too will soon be making original Japanese nasi in an instant.

  • Preparation time (if you cooked the rice beforehand): 15 minutes
  • Preparation time: 15 minutes
  • Overall cooking time: 30 minutes

Ingredients

  • 400 grams of white or brown rice (cooked and cooled)
  • Omelette made from 2 eggs; cut into small cubes
  • 1 cup peas (fresh or frozen)
  • 2 tablespoons of grated carrot
  • 1/2 medium chopped onion
  • Other types of vegetables of your choice, such as corn, edamame beans (these are young, green soy beans) and red and / or green bell pepper
  • 1 1/2 tablespoons (cream) butter
  • 2 tablespoons soy sauce or oyster sauce
  • 1 teaspoon of sesame oil
  • Salt and pepper to taste
  • Meat, chicken or tofu (optional)
  • Other herbs and / or seasonings of your choice (e.g. finely chopped garlic or ginger root)

To step

Part 1 of 3: Preparation

  1. Divide the fried rice into portions. Serve the nasi in bowls or on plates. If you want, you can garnish the dish with some toasted sesame seeds or spring onions. If you want, you can put extra seasonings on the table such as soy sauce or yum yum sauce. Yum yum sauce is often served in Japanese restaurants. It is a creamy sauce that has a pink color and is made from, among other things, mayonnaise, tomato paste, paprika and cayenne pepper.
  2. Serve the fried rice warm. Serve the nasi immediately because the dish is best hot. If nasi is left over, do not heat it up in the microwave, but use a wok or a frying pan to heat up the nasi.

Tips

  • Gomoku meshi is a special type of Japanese nasi made from rice to which small cubes of chicken, carrot, fried tofu, mushrooms and burdock carrot are added. The ingredients are stir-fried with soy sauce, sake (Japanese rice wine) and sugar.
  • Chahan is Chinese nasi that has been adapted to the Japanese taste. Sometimes, for example, katsuobushi is added. Katsuobushi is dried, smoked and fermented tuna. It is an authentic Japanese ingredient that gives a very special taste to the dish.
