If you have more zucchini at home than you can eat, consider freezing it. Zucchini must first be cut or grated into smaller pieces, then blanched before freezing. Here's how to do it.

Part 1 of 3: Preparing the zucchini
Freeze the zucchini until you need it. Frozen blanched zucchini can be stored for 9 to 14 months, depending on how airtight the packaging is and how cold the freezer is.
- After thawing, use the zucchini within 3 days and do not try to freeze it again.
