Method 2 of 2: How to Freeze Bananas for Baking
1 Leave the bananas to ripen or overripe. Bananas stop ripening in the freezer, so you don't need to freeze green bananas. Use yellow or brown bananas instead. Overripe bananas are great for baking because they are very sweet, so you can freeze even bananas with brown peels.
- If the banana is so overripe that it turns into a liquid, then it should be thrown away.
2 Peel the bananas. Do not freeze bananas in their skins! Otherwise, the peel will turn black and sticky, it will look unpleasant and will have to be scraped off with a knife. In the future, you will thank yourself for peeling bananas.
- Don't throw banana peels away if you have a compost pit.
3 Leave the peeled bananas whole or puree. You can leave the bananas whole and puree after defrosting. If you wish, you can do everything in advance! Place the bananas in a bowl and mash with a fork until they are pureed.
- Add a few drops of lemon juice to the puree if you want to preserve the color. Color doesn't really matter if you're using bananas in your baked goods.
- If you have too many bananas to grind, you can use a food processor or blender, but the bananas are soft enough to handle by hand.
4 Freeze bananas in a special bag and indicate the date. Place whole bananas in a bag or spoon over the puree. Remove air from bag and seal. Use a marker to indicate the date exactly how many bananas are stored in the freezer.After that, just store the bags in the freezer.
Bananas will freeze completely in few hours.
5 Use bananas for baking within 6 months. The banana puree bag must be removed from the freezer one hour before baking and left to defrost on a plate or on the table. If you haven't used frozen bananas in 6 months, then the bag should be thrown away.

- If you have frozen whole bananas, they will be easy to mash with a fork after defrosting.
