Ingredients

  • 2 900 g cans shredded tomato (whole tomatoes can be used for a lumpier sauce)
  • 1 900 g can of tomatoes, chopped cubes
  • 2 1.7kg cans of tomato sauce
  • 2 1.7 kg cans of tomato paste
  • 1 large onion head
  • 1 medium / large zucchini
  • 2 tbsp. l. minced garlic (or more, optional)
  • 1/4 cup olive oil
  • 2 tbsp. l. basilica
  • 1 tbsp. l. oregano
  • 1/2 tbsp. l. parsley
  • 4 medium anchovies, pickled in olive oil
  • 2 tsp sea ​​salt
  • Optional: a handful of raisins and / or pine nuts

Steps

  1. 1 Make sure to use fresh herbs to create that unique Sicilian flavor! They can really improve the dish!
  2. 2 Chop the onion.
  3. 3 Prepare 2 tbsp. l. garlic (4-5 cloves). You can use a garlic press or minced garlic.
  4. 4 Pour olive oil into a 4 liter saucepan (or larger) and cook over medium heat.
  5. 5 Add the chopped onion as the oil warms up (usually 2 minutes). Cook for 5-10 minutes, stirring gently, until the onions are clear and soft, but not brown.
  6. 6 Add garlic and stir well. If you are using raisins or nuts, now is the time to add them. Bring them to a golden brown color, they can burn easily!
  7. 7 Open all the jars except the tomato paste while the garlic is cooking, stir after opening each jar. Cut into small zucchini pieces.
  8. 8 Add chopped tomatoes and stir, bring to a boil. Add zucchini.
  9. 9 Add chopped tomatoes and tomato sauce, stir, bring to a boil again.
  10. 10 Open a jar of tomato paste both top and bottom. Remove the lids to add the pasta to the pan. Make sure to remove the bottom lid before it drops into your sauce!
  11. 11 Mix well. If the pasta makes your sauce too thick, add a glass of water.
  12. 12 Chop the anchovies and add them to the sauce, add the oils. (This is the secret of the true taste and aroma of Sicilian sauce !!!)
  13. 13 Add basil, oregano, parsley and salt; mix well.
  14. 14 Reduce heat and simmer for about 2 hours, stirring occasionally.
  15. 15 Serve with pasta or use a sauce with your favorite Italian dishes. Top with grated mozzarella or Pecorino, real Sicilian cheese!

Tips

  • If your sauce is bitter or sour, add a tablespoon of sugar, or better a teaspoon of balsamic vinegar.
  • Another method of traditional Italian Bolognese is the use of several types of white meat, for example, chopped pork, chicken, veal.
  • The longer you simmer the sauce, the tastier it will be. On special occasions, start earlier and simmer the sauce for about 6 hours. Add a little water if the sauce starts to thicken more than you would like.
  • Add 230 grams of cooked ground beef for a meat sauce, or add meatballs and Italian sausages for authentic Italian pasta for dinner.

Warnings

  • Remember to stir the sauce every 10-15 minutes to prevent it from burning.
  • Be careful if adding garlic when the oil is not yet heated. Garlic can burn and taste bitter.
