  • ½ tsp (2.5 ml) salt
  • ¼ tsp (1.25 ml) ground black pepper
  • 1 l. vegetable oil

Steps

Method 1 of 3: Liver Baked with Bacon and Onions

  1. 1 Preheat oven to 180 ° C. Lightly coat a baking dish with nonstick cooking spray.
    • You need to lightly grease the baking dish. The fat from lard prevents the contents from sticking to the mold, even with a little cooking spray or extra fat.
  2. 2 Lay the bacon and onion in layers. Spread three pieces of bacon evenly spaced out in a baking dish. Sprinkle onion on top, then add the remaining bacon slices and cover again with a layer of onion.
    • Add some butter on top (in chunks).
  3. 3 Mix together wine, parsley, bay leaf, thyme, salt, pepper and water. Pour this mixture over the onion and bacon as evenly as possible.
    • It is recommended that you mix all the ingredients before pouring into the mold so that the entire mixture is distributed as evenly as possible throughout the bacon and onions.
  4. 4 Bake for 30 minutes. Cover the tin with aluminum foil and place in the preheated oven. Bake until the onion and bacon are very flavorful.
  5. 5 Dip the liver in flour. When the onions are done, pour the flour into a bowl and roll each piece of liver in it on all sides.
    • Instead of a bowl, you can add flour to a large bag. Place the pieces of liver, one at a time, in a bag, close it, and shake thoroughly until all sides of the piece are floured.
    • Regardless of which method you use, you should shake the liver well over a bag or bowl to remove excess flour.
  6. 6 Place the liver in a baking dish. Temporarily remove the foil cover and place the liver on top of the bacon, as evenly as possible.
    • When done, cover the dish with foil again.
  7. 7 Bake for another 40 minutes. Keep the pan covered for the first 30 minutes. For the last 10 minutes, remove the foil and continue to bake the liver uncovered.
    • Water the liver two or three times while baking. Use a brush to cover the liver in some places with the juice collected from the bottom of the mold. This will diffuse the flavor and prevent the liver from drying out.
  8. 8 Serve immediately. Remove the dish from the oven and place the liver, onion, and bacon on top of a serving platter.

Method 2 of 3: BBQ Beef Liver

  1. 1 Combine flour, salt and pepper. Place three ingredients in a large bag. Close it and shake well to mix all the ingredients.
    • Alternatively, you can add the three ingredients to a shallow bowl and stir them with a spoon or whisk.
  2. 2 Dip the liver in the flour mixture. Place the pieces of beef liver in the flour bag. Close it again and shake well so that all sides are floured.
    • To avoid overcrowding the bag, add several pieces at a time. If you overfill the bag, it will be very difficult to flour the sides of all the pieces.
    • If, instead of a bag, you prepared the mixture in a shallow bowl, you should put the liver in a bowl of flour and roll it over with your fingers, a fork, or tongs.
    • Regardless of which method you use, you should gently shake the liver over the bag or bowl to remove excess flour.
  3. 3 Combine the BBQ sauce ingredients. In a small bowl, combine water, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, and ground dried garlic. Stir all ingredients using a whisk or spoon until well combined.
  4. 4 Heat oil in a skillet. Pour the oil into a large skillet and heat it over medium heat for 1 to 2 minutes, until it is glossy and smudges easily.
    • Do not let the oil start to smoke. If it starts to smoke, it will begin to break down and be too hot for this recipe.
  5. 5 Fry the liver. Place the liver slices in oil and fry for 4-6 minutes on both sides or until brown on both sides.
    • Use the forceps to gently turn the liver over. Ideally, you will need to turn the liver over once when it's browning, but if you need to turn it over several times to avoid sticking or scorching on one side, that's okay; it won't ruin the dish.
  6. 6 Add the sauce. Pour the sauce over the liver and bring to a boil. When it boils, reduce heat to low and cover the pan.
    • By bringing the sauce to a boil before adding, you can be sure everything has been brought to the correct temperature. Do not let the sauce simmer too much, as the liver can cook too quickly and become tough as a result.
  7. 7 Simmer for 20 minutes. When the liver is done, it should be soft.
    • During the cooking process, remove the lid as rarely as possible (only in the most necessary cases).
    • If you wish, you can turn the liver over a couple of times. This will prevent sticking to the pan.
  8. 8 Serve immediately. Place the hot liver on a serving plate, top with the sauce from the skillet and enjoy.

Method 3 of 3: Southern Fried Chicken Liver

  1. 1 Heat the oil in a deep fryer or large heavy-bottomed saucepan. The oil should reach a temperature of about 190 ° C.
    • Use a candy thermometer to check the temperature of the oil. These thermometers can handle high temperatures, so you can attach the thermometer to a pot to keep track of the temperature.
  2. 2 Beat eggs with milk. Whisk the eggs and milk in a shallow, wide bowl until combined.
    • When everything is thoroughly mixed, the mixture should be pale yellow in color. There shouldn't be any white or dark yellow stripes, but some specks may remain.
  3. 3 Combine the crumbling ingredients. Place flour, ground dried garlic and pepper in the bag. Close the bag and shake well to mix the ingredients.
    • Alternatively, you can add the three ingredients to a small bowl and stir them with a spoon or whisk.
  4. 4 Dip the chicken liver in the egg mixture. Dip each chicken liver in the egg mixture, making sure all sides are covered.
    • Soak the chicken livers over the egg mixture for a few minutes to allow excess glass.
  5. 5 Dip the liver in the flour mixture. Place the liver in a bag of flour, close it and shake well so that each side of the liver is in the flour mixture.
    • To avoid overcrowding, add several pieces at a time. If you overfill the bag, it will be quite difficult to flour all sides of all the pieces.
  6. 6 Cook the liver for 5-6 minutes. Place the liver gently (several slices at a time) in the hot oil. Cook each chicken liver until golden brown.
    • To protect yourself from oil splashing, use a frying net to cover the pan while the liver is cooking. Do not cover the pot with a lid, as the temperature inside will rise and the cooking time will be interrupted.
  7. 7 Serve immediately. Remove the cooked liver with a slotted spoon. Place the liver on paper towels or paper bags for a few minutes before placing on serving dishes. Enjoy.
