There are several places where you can buy good quality fish. Head to the fish market and you will have a wide selection of truly fresh fish, fresh from the boat. Another option is a fish store or the fish department of a supermarket. The choice is yours, but make sure the fish is fresh.
Steps
1 Go to a trusted grocery or fish store.
2 Ask how fresh the fish is or watch today's catch.
3 The word "fresh" can be misleading. In most areas without access to water bodies, there are usually two types of fish on sale - thawed or frozen. An exception might be some special seller who really prefers to sell fresh produce.
4 Look for smooth, shiny flesh. The fish should not deform when touched.
5 Sniff the fish. "Fresh" fish should not have a "fishy", but an oceanic smell - like a fresh ocean breeze.
6 Check your eyes. If the head is in place, the fresh fish should have clear eyes without clouding. They should protrude slightly.
7 Check the gills. In general, they should be bright pink / red and wet, but not slippery or dry.
8 Check out the assorted fish. Fish fillets and cuts should be moist and maintain their rich color.
9 On fillets and tenderloins, look for flesh splits and dips. If the meat disintegrates, it is not fresh.
10 Look for pale tones, brown or yellow border around the edges, and a spongy consistency. These are all signs of aging fish.
Tips
- The best way to buy fresh fish is to find a reputable supplier and get to know him. If he knows that you really want to choose a good fish and are good at it, he will be obliged to offer you only the best.
- Herring should have eyes red and not clear.

When making sashimi or sushi, buy only sushi-grade fish or vacuum-sealed fish.
