Dragon fruit, also called pitaja or pitahaja, has a leathery, bright red or pink skin and sweet kiwi-like flesh. It is a type of cactus and is rich in fiber, vitamin C and vitamin B. The colorful skin is not edible, but the pulp is wonderfully creamy. There are several ways to prepare dragon fruit: on a skewer, in a smoothie or as a sorbet.

Spoon the sorbet into the preserved dragon fruit halves. Serve with cake or other light pastry.

- Wash the outside of the fruit. When you cut the fruit, bacteria can get into the pulp and make you sick.
