If you've never made a marshmallow, try making one. It tastes much better than store-bought and is a lot of fun to make. A batch of homemade marshmallows are a great gift and a delicious side dish for baked sweet potatoes.

Ingredients

  • ½ cup cold water
  • 3 sachets of unflavored gelatin
  • 2/3 cup corn syrup
  • 2 cups granulated sugar
  • ¼ glass of water
  • ¼ h. L. salt
  • 1-3 st. l. vanilla extract or other flavors (almond extract, mint extract, etc.)
  • 1/3 cup cornmeal (cornstarch)
  • 1/3 cup caster sugar
  • Food coloring (optional)

Steps

  1. 1 Collect ingredients and utensils before starting work. You will need them throughout the entire cooking process.
  2. 2 Prepare a mixture of equal parts powdered sugar and cornstarch or cornmeal. In a bowl, combine one glass or more of each ingredient and keep this mixture handy.
  3. 3 Prepare baking sheets. Marshmallows are very sticky.
    • Line the baking sheets with plastic wrap, waxed paper, or parchment to make it easier to remove the marshmallows.
    • Spray a baking sheet or plastic wrap thoroughly with cooking spray, or brush a baking sheet completely with vegetable oil. Make sure the entire surface is well lubricated.
    • Alternatively, you can use a silicone mold as it is non-stick.
    • Sprinkle the surface of the mold with a mixture of cornstarch and powdered sugar. Collect excess mixture back into bowl and set aside for later.
  4. 4 Pour 3 bags of gelatin into a bowl.
  5. 5 Add ½ cup cold water to the gelatin.
  6. 6 Leave the gelatin and water on for 10 minutes while you prepare the sugar and corn syrup mixture.
  7. 7 In a small saucepan, combine 2 cups granulated sugar, ¼ cup water, and 2/3 cup corn syrup.
  8. 8 Bring the mixture to a boil in a saucepan.
  9. 9 Place a candy thermometer in the mixture and watch until the temperature reaches exactly 117 ° C (soft ball stage).
  10. 10 Add the boiling sugar mixture to the gelatin mixture and use a mixer to stir at high speed. Add ¼ tsp while stirring. salt and beat for at least 15 minutes.
  11. 11 Add vanilla extract or other flavoring at the end of the whisk. Also, at this stage, if desired, you can add food coloring.
  12. 12 Spread the mixture evenly on the prepared baking sheet. Before starting work, grease your hands, a spoon and a scoop with vegetable oil.
  13. 13 Sprinkle cornstarch over the top and cover with another piece of plastic wrap or wax paper if desired, then press down on the mixture.
  14. 14 Leave the marshmallows at room temperature for about four hours.
  15. 15 Remove a large layer of marshmallow from the pan and place it on a cutting board, then sprinkle it with the cornstarch mixture. Sprinkle cornstarch over the sides that are now open.
  16. 16 Use kitchen scissors or a pizza knife to cut the marshmallows into squares. You can also use cookie cutters to shape the marshmallows. Separate the pieces so they don't stick together.
  17. 17 Sprinkle the pieces with powdered sugar to keep them from sticking to each other on the cut sides.
  18. 18 Place the marshmallows in a container, placing a sheet of waxed paper between each layer. If you don't, the marshmallows will stick together and form a ball.
    • As long as the container has fairly straight sides, you can measure the bottom of the container with wax paper and cut out several layers at once.

Tips

  • The marshmallow will take the shape of a baking sheet. If you want, instead of a baking sheet, you can pour the marshmallows into a certain shape. Make sure to grease the pan well and coat it with the cornstarch mixture.
  • Dip ready-made marshmallows in melted chocolate for even better taste!
  • To make a marshmallow, watch the temperature carefully.
  • To clean bowls and other utensils, soak everything in hot, soapy water.
  • Brush with vegetable oil and starch your hands and any utensils that will come into contact with the marshmallow. It is very sticky.
  • A fire diffuser will help the sugar / corn syrup mixture heat up evenly.
