Method 2 of 3: Break two eggs at a time
1 Take two eggs in both hands. If you are comfortable using your non-dominant hand, you can crack two eggs at a time. Place the eggs securely in each hand. Hold them in any way you like, as long as make sure your pinky and ring finger are touching the bottom of the egg.
- You may need to hold the eggs differently in each hand, but this shouldn't affect the process.
2 Break the eggs in your hands. Hit each egg on a hard surface, such as a cutting table. A few firm strokes, and slight cracks should appear on the shell. Crack eggs at the same time.
3 Open the eggshells. Hold the egg over a bowl. To keep the eggs stable, keep your index and pinky fingers at the base of the egg. Then use your remaining fingers to split the shell in half and pour the contents into a bowl.
- This technique takes practice as breaking an egg with one hand is not easy. You can spoil several eggs in the process.
Method 3 of 3: Spotting Errors
1 Use your dominant hand for the most part. Always use your dominant hand unless you want to break two eggs at once. This will make it easier for you to handle the egg.
2 Remove all shell particles. Even with perfect execution, shell particles can get trapped in the egg white and yolk. Wet your fingers to fix the problem. Dip your fingers into the egg whites and yolks. The water will naturally attract the shell particles. SPECIALIST'S ADVICE
"You can even use half an eggshell to catch all the pieces that have fallen off."

Experienced chef3 Do not break eggs on the edges of the crockery. Never do this. Although this is a generally accepted method, it is not effective as it often breaks the egg.
