Steps

Method 1 of 5: Plain Sauteed Pickles

  1. 1 Heat vegetable oil in a large skillet to 190 ° C. Pour about 2.5 cm of vegetable oil into the skillet. Check the temperature with a deep fat thermometer. You can also add a pinch of flour to the skillet. When it turns brown and boils, the oil is ready to use.
  2. 2 Make a dough. In a large bowl, combine 1 cup flour, 1 cup cornmeal, and 3 lightly beaten eggs. Mix until a smooth, thick dough is obtained.
  3. 3 Season the cucumbers with salt and pepper to your liking.
  4. 4 Dip each piece of pickled cucumber into the dough. Cover the cucumbers thoroughly with the dough using a fork or tongs. Hold the cucumbers over the dough for one to two seconds to drain the excess.
  5. 5 Fry the cucumber slices in batches. Once you've covered the first batch of cucumbers with the dough, start frying. Dip the cucumbers into the hot oil using a wire mesh or tongs. Cook for about 3 minutes, until crispy and golden brown. The cooking time depends on the size of the pan. Cucumbers are done if they float easily on top of the oil. As soon as the first batch of cucumbers is ready, proceed to frying the next one.
    • Don't add too many cucumbers or you will lower the oil temperature. The pickles will be moist, not crispy.
  6. 6 Use tongs to remove the pickles from the pan. Place on a plate lined with paper towels to remove excess vegetable oil.
  7. 7 Serve. Serve the fried pickles immediately with a small bowl of Ranch sauce.

Method 2 of 5: Spicy Fried Pickles

  1. 1 Make the sauce. To do this, simply mix 1/4 cup mayonnaise, 1 tbsp. l. horseradish (without liquid), 2 tsp. ketchup and 1/4 tsp. Cajun seasoning. Stir until a thick, creamy mixture is obtained.
  2. 2 Heat the oil. Heat 1 inch vegetable oil in a skillet to 190 ° C.
  3. 3 Make a dough. To do this, mix thoroughly 1/2 cup flour, 1 3/4 tsp. Cajun seasoning, 1/2 tsp Italian seasoning, 1/4 tsp cayenne pepper, 1/2 tsp salt and 1/2 cup water.
  4. 4 Place the pickles on a paper towel and pat dry. For best frying results, cucumbers should be dry.
  5. 5 Place half of the cucumbers in the dough. Mix thoroughly so that they are completely covered with the dough.
  6. 6 Place the pickles in the butter. Transfer the dough cucumbers to the butter with a slotted spoon one at a time to drain the excess dough.
  7. 7 Fry until golden brown. This should take 1-2 minutes.
  8. 8 Remove from heat. Remove the pickles from the pan with the same slotted spoon and place them on a paper towel to dry.
  9. 9 Repeat this process with the remaining pickles and dough.
  10. 10 Serve. Once the pickles are done, serve with the sauce you made. You can also add some celery sticks.

Method 3 of 5: Sweet and Spicy Stir-Fried Pickles

  1. 1 Pour vegetable oil into a skillet and heat to 190 ° C. The layer of oil should be approximately 2.5 cm.
  2. 2 Make a cornmeal mixture. In a shallow bowl, combine 1 cup of self-rising cornmeal mixture, 1/4 cup flour, 1 tbsp. l. ground red pepper, 1 tsp. caraway seeds, 1/2 tsp. ground cayenne pepper and 1/2 tsp. ground black pepper.
  3. 3 Make a milk mixture. In another bowl, combine 1 lightly beaten egg and 1/2 cup milk. Stir until smooth.
  4. 4 Dip pickles in both mixtures. Dip 2 cups of crispy pickled cucumber slices (no brine) in the milk mixture, then dip them in the cornmeal mixture.
  5. 5 Fry the cucumbers in batches for 3 minutes each. Place a batch of pickles in hot oil and sauté for 3 minutes, until golden brown.
  6. 6 Remove pickles from heat and place on a paper towel to dry.
  7. 7 Serve. Serve these delicious fried pickles as soon as they're done. You can add Ranch sauce or 2 tbsp. l. hot sauce.

Method 4 of 5: Roasted Pickles in Beer Dough

  1. 1 Drain the brine from 2 x 500 ml jars of dill pickled cucumber slices and pat dry with paper towels.
  2. 2 Make an egg mixture. Mix 1 large egg, 1 can (350 ml) beer, 1 tbsp. l. baking powder and 1 tsp. salt.
  3. 3 Add 1/4 cup flour to the mixture. Whisk the ingredients until smooth.
  4. 4 Pour 2.5 cm of vegetable oil into a large skillet.
  5. 5 Heat the mixture over medium heat. Heat until the oil reaches about 190 ° C.
  6. 6 Dip the pickles into the batter. Let the excess dough drain.
  7. 7 Fry the cucumbers until golden brown. This should take about 3-4 minutes.
  8. 8 Serve. Serve Pickles with Spicy Ranch Sauce.

Method 5 of 5: Breading Pickles

  1. 1 Use kitchen tongs to remove the cucumbers from the jar. Take as much as you will fry.
  2. 2 Mix regular flour with cornmeal. Add spices for flavor.
  3. 3 Pour the mixture into a zippered plastic bag (you can use another container, such as a glass jar or plastic container).
  4. 4 Add pickles to the mixture. Shake the container (jar or bag) until the flour completely covers the cucumbers.
  5. 5 Fry the cucumbers at 180 ºC. Cook for no more than two minutes.
  6. 6 Serve hot and you are sure to delight your guests.
