Tiramisu is arguably the most indulgent Italian dessert ever made. Here's a quick and easy way to impress your friends.

Ingredients

  • 3 large eggs
  • 500 g mascarpone cheese
  • Espresso or strong coffee
  • Savoyardi biscuits / ladies fingers / thin cakes
  • (optional) 1 glass of cognac
  • Cocoa powder [or instant chocolate drink mix]
  • Sugar (to taste)

Steps

  1. 1 Beat 3 large eggs in 2 different bowls (use a large bowl for the egg whites and a smaller one for the yolks). Make sure there are no yolks in the whites, otherwise the egg whites will not mix well.
  2. 2 Mix the egg yolks with an electric mixer and gradually add sugar until the yolks are thick, creamy and light yellow in color.
  3. 3 Add about 500 g of mascarpone to another bowl and stir quickly to loosen. Then, use an electric mixer to combine the egg yolks and mascarpone.
  4. 4 Rinse and dry the whisk, then beat the egg whites until high peaks form. Continue adding the egg whites to the mascarpone mixture and mixing until no lumps remain.
  5. 5 Leave it aside. Prepare a strong espresso and refrigerate.
  6. 6 Cover a large and rather deep dish with ladies' fingers (savoyardi cookies) and top with 2/3 of the coffee mixture.
  7. 7 Top with half the egg mixture, then sprinkle with a thick layer of cocoa. Use an instant chocolate drink as it is a little sweeter.
  8. 8 Dip your ladies' fingers into the rest of the coffee mixture and (don't worry if you run out of it, you can just make a new one) and gently spread over the cocoa.
  9. 9 Spoon out the rest of your egg mixture and sprinkle with cocoa again.
  10. 10 Refrigerate for 2 hours and serve.

Tips

  • Buy fresh eggs. Tiramisu will last longer.
  • If you can get it, then use Camp coffee combined with a little water instead of Espresso. It is quick and easy and there is no need for heating. Add alcohol like Amaretto or Marsala - you can use as much as you like.
