  • ½ tablespoon (13 g) brown sugar
  • ½ tablespoon (3 g) coriander seeds
  • ¼ tablespoon (2 g) black peppercorns
  • ¼ tablespoon (1 g) paprika
  • ¼ tablespoon (2 g) garlic powder
  • ¼ tablespoon (2 g) onion powder
  • ¼ tablespoon (1 g) dried cumin

Part 1 of 3: Marinate your steak

  1. 1 Prepare the marinade. Combine salt, coriander, black pepper and cumin in a spice grinder or mortar. Grind the spices into a fine powder. Pour the chopped spices into a small bowl and add sugar, paprika, and garlic and onion powder.
    • Use a spoon or fingers to mix all the spices well.
  2. 2 Season the steak. Sprinkle half of the spices on the steak, then spread them with your fingers over the entire surface of the steak and rub into the meat. Flip the steak to the other side and repeat.
    • Transfer the steak to a plate and place in the refrigerator to marinate in the spice mixture for 3-4 hours.
  3. 3 Remove the steak from the refrigerator before cooking. After the steak has been marinated for 3-4 hours, start heating up the grill. While the charcoal or wood is burning, remove the steak from the refrigerator and place it on the table to warm up.
    • When the grill is ready, the steak reaches room temperature and is immediately ready to grill.

Part 2 of 3: Preheat the Braye

  1. 1 Clean your grill. Use a wire brush to clean the grill to remove any old burnt food particles. After removing the large pieces, run a wire brush over each part of the grill and scrub them well. Empty old ash from the bottom of the bowl.

Part 3 of 3: Prepare and Serve Your Steak

  1. 1 Cook a steak on each side. When the grill is ready, use the meat tongs to transfer the steak to the center of the grill. Do not use a fork to prevent all the juice from leaking out of the meat.

Tips

  • Do not marinate the steak with sweet sauces or marinades before you start frying. The high heat in which the braai steak is cooked may burn high-sugar marinades.
