Lumpia is a Filipino version of the Asian spring roll that can be served as a side dish or as a snack. Vietnamese use thinner dough for rolls.

Ingredients

  • 1 tablespoon (15 ml) vegetable or canola oil
  • 400 g ground beef
  • 2 garlic cloves (minced)
  • 1 teaspoon (2 g) ground black pepper
  • 1 teaspoon (6 g) salt
  • 1 teaspoon (3 g) garlic powder
  • 1 teaspoon (5 ml) soy sauce
  • 30 sheets of ready-made spring roll dough
  • 2 cups (475 ml) vegetable oil or canola oil (for frying)

Steps

Method 1 of 2: Prepare the meat

  1. 1 Heat one tablespoon of vegetable oil over high heat in a large skillet or wok (small diameter round deep Chinese pan with a convex bottom). Put the ground beef in the pan and fry it thoroughly; fry the minced meat until tender. Minced meat should acquire a brownish-golden hue. Remove skillet from heat and drain off fat.
  2. 2 Place the onion and garlic in the same skillet. Fry them for 2 minutes. Then add green onions, cabbage, carrots and ground beef. Fry all ingredients together. Season with pepper, salt, soy sauce and garlic powder. Stir and then remove the pan from the heat again.
  3. 3 Take one sheet of dough and place it on a cutting board (or hard surface). Place 3 tablespoons of the prepared mixture diagonally on one side of the dough sheet. Leave at least one centimeter on either side of the dough sheet. Grasp the side of the dough closest to the filling and wrap it up. Continue rolling. When you get to the middle, fold the edges on both sides. Continue rolling. Make sure the filling stays inside. When you get to the end, use some water to secure the edge. Use plastic wrap to wrap each roll. Wrap the roll with cling film while you cook the next one. Thanks to this, the rolls will not be dry. Repeat the process for each roll.
  4. 4 Take a heavy skillet and fill it 1 cm thick with vegetable oil. Heat the oil for about 5 minutes. Place the rolls gently into the pan, lowering them on the side of the pan. This prevents the oil from splashing.
  5. 5 Fry about 3-4 rolls at the same time for about 1-2 minutes. Depending on which heat you are cooking on, wait until the rolls are golden brown. Place the finished rolls on paper towels to remove excess oil. Serve the dish immediately.

    • 1 teaspoon (6 g) iodized sea salt
    • 1 teaspoon (3 g) garlic powder
    • 1 tablespoon soy sauce
    • 30 sheets of ready-made spring roll dough
    • 2 cups (475 ml) vegetable oil or canola oil (for frying)
  2. 2Combine all the raw ingredients.
  3. 3 Wrap the roll like a cigar with the ends open.
    • Freeze the rolls in the freezer by placing them in a bag or freezer container if you want to fry them later.
  4. 4 Pour 2.5 cm oil into a skillet and fry until golden brown, adding more oil if necessary. Be careful not to burn the rolls.

Tips

  • If you don't eat pork, you can use poultry, beef, or a boiled egg instead of pork.
  • When frying in a pan, place the rolls seam side down. Thanks to this, the roll will not fall apart in boiling oil.
  • If you want to cook a large amount of lumpia, freeze it and then fry it if necessary. Frozen lumpias do not need to be thawed before frying.
