Meat rub is a mixture of salt, pepper, sugar, dried herbs and spices to flavor meat. Unlike the marinade, dry rub forms a crispy crust on the outside of the meat when grilled. During baking, the sugar caramelizes, forms a crust and seals all juices and aromas in the meat. Any piece of meat can be grated with the spice mixture before being grilled or smoked.

  1. 1 Choose steaks.
    • There are many types of steak, but not all of them are suitable for the dry-rub method. The taste of thin pieces can be easily overpowered with a lot of dry rub spice, so choose thicker pieces, at least 2 cm thick. Chunks of bone-in steak have a richer flavor, but take longer to cook. Choose a steak that is more marbled, with little or no connective tissue. Good choices are rib eye steak, tee bon steak, New York strip steak, top sirloin steak.
  2. 2 Prepare the rub.
    • Either follow the recipe for making the rub or make your own. Brown sugar, paprika, caraway seeds, granulated onions and garlic, mustard powder, chili flakes, cayenne pepper, thyme are some of the ingredients for making the chalice. If you are making your own rub, be sure to add salt and pepper. You will need about ¼ cup (60 grams) of chalice for each steak.
  3. 3 Grate the steaks.
    • Take one steak, take a generous handful of the mixture, apply it to one side of the steak, and rub the spices into the meat until the entire surface is covered with spices. Flip the steak and rub the other side with the spices.
  4. 4 Let the steaks settle.
    • The steak can be grated with spices a few minutes before grilling, but for best results, it is advisable to leave the spiced steak in the refrigerator overnight or for several hours. Allow the meat from the refrigerator to return to room temperature before baking.
  5. 5 Bake grilled steak.
    • Place the steak on a preheated grill and cook to your liking. The rub may burn, so grill the steak on a low heat.
  6. 6 Cook steak in the oven. Cook the steak for 7 minutes on each side. Place the steak in the oven after warming at room temperature. Fry on a wire rack or baking sheet.
