Cauliflower bread is a healthy and nutritious substitute for flour bread that is very easy to bake. One slice of cauliflower bread replaces a serving of vegetables, so even one slice of bread can significantly improve the nutritional value of a meal! If you have a food processor, baking cauliflower bread is incredibly easy. To prepare it, you will need a few simple ingredients and no more than one hour of work. Whether you're on a gluten-free diet or just want to eat healthier foods, replacing regular bread in your sandwiches with cauliflower bread is a smart and healthy way to enjoy your favorite food!

Ingredients

  • 1 medium head of cauliflower
  • 1 large egg
  • ½ cup (50 g) grated low-fat mozzarella
  • ¼ teaspoon (3 g) sea salt
  • ¼ teaspoon (0.6 g) ground black pepper

Steps

Part 1 of 3: Chop the cauliflower

  1. 1 Preheat oven to 230 ° C. Preheat the oven to 230 ° C before cooking. While you knead the dough and shape it into bread, the oven will be hot enough to bake.
  2. 2 Remove the stem. Rinse the cauliflower and place on a cutting board. Cut off the center and other stems so that only the inflorescence (the dense top of the cabbage) remains on the board.
    • If you don't cut the stem off, the bread will be coarser and less fluffy. It is not necessary to cut all the stems to the last, just cut off most of them.
  3. 3 Chop half of the cauliflower in a food processor. Place the cut cauliflower half into a food processor. Grind the cabbage at high speed until the pieces are about the size of rice.
    • Then pour the shredded cabbage into a microwave-safe bowl.
  4. 4 Chop up the remaining half. Place the remaining half of the cabbage in a food processor and chop it to the same size. Pour these kale slices into a microwave-safe bowl as well.

Part 2 of 3: Heat and mix the cauliflower with other ingredients

  1. 1 Heat the cauliflower in the microwave for 7 minutes. Before baking the cauliflower, be sure to soften it in the microwave. Place the bowl of chopped cauliflower in the microwave and heat it over high for 7 minutes.
  2. 2 Squeeze the cauliflower in cheesecloth. Remove the cabbage from the microwave and wait until it is cool enough to touch. Then take a third of the shredded cauliflower and place it on cheesecloth. Fold the edges of the cheesecloth together to make something like a pouch.
    • Squeeze the cheesecloth over the sink to squeeze the liquid out of the boiled cauliflower. Continue squeezing until the fluid stops flowing. Set the squeezed cauliflower aside and then squeeze out the rest of the cauliflower in the same way.
    • When baked, the consistency of the squeezed dry cabbage will begin to resemble bread.
    • If you don't have gauze, fold thick paper towels.
  3. 3 Prepare the egg and cheese. Break an egg into a bowl and beat it a little with a fork to mix the egg white with the yolk. Grate the mozzarella on a coarse grater.
  4. 4 Combine all ingredients in a bowl. After you've squeezed out all the cauliflower and prepared the egg and cheese, transfer the cabbage to a large bowl. Add the beaten egg, grated mozzarella and pepper to it. Take a large spoon and mix everything thoroughly.
    • You can add other ingredients at this stage to add extra flavor to the bread. For a more sophisticated flavor, add a tablespoon (15 g) of fresh grated herbs like rosemary or parsley, or add an additional half cup (50 g) of cheese for a cheesier, fuller flavor.

Part 3 of 3: Bake the bread

  1. 1 Prepare a baking sheet. Tear off a piece of baking paper and line the baking sheet with it. Then spray the paper with non-stick spray.
  2. 2 Shape the dough into squares. Spoon the dough out and place on a baking sheet in four equal-sized pieces. Use your hands to shape the dough into a square shape, about 1.25 cm thick. Place the squares apart from each other so that they do not stick together during baking.
  3. 3 Bake the bread for 15-17 minutes. Place the baking sheet in the preheated oven. Bake the bread for 15 minutes and check the results. If the bread has a golden crust, remove it from the oven. If not, bake it for another 2 minutes, then remove it from the oven.
  4. 4 Wait 10 minutes for the bread to cool. Remove the bread from the oven and leave it on the table for 10 minutes to cool. Then use a spatula to remove the bread from the baking sheet and serve warm or cold!

Tips

  • If you want to bake cauliflower buns, round the dough on a baking sheet and bake it that way. When the buns are baked, cut them in half to resemble burger buns.
  • Shredded cauliflower can sometimes be found in some grocery or health food stores. This will save you some time when baking your bread.
