Do you need whipped cream, but at the last minute it turns out that you have nothing at home? Don't panic - there is hope! While it may seem impossible to make your own whipped cream, it is actually quite simple. You only need a few ingredients, a good whipping and a little patience. Try this recipe to create fluffy whipped cream from the milk from your fridge.

Ingredients

  • 1/2 cup of milk
  • 1/4 cup cold water
  • 1/4 cup of powdered sugar
  • 1 tablespoon of gelatin powder
  • 1 tablespoon of vanilla essence

To step

  1. Add the gelatin to the water: Put 1/4 cup of water in a small bowl. Divide the gelatin over the water. Let it stand until the gelatin has absorbed all the water. No stirring is necessary.
  2. Heat the milk: Pour the milk into a small saucepan and heat it over medium heat while stirring. Heat the milk until it starts to bubble around the edge. Make sure that the milk does not burn, as this will not improve the taste of the whipped cream.
  3. Mix the gelatin with the milk: Remove the saucepan with milk from the heat and pour the hot milk into a bowl, then add the gelatin water mixture. Mix with an electric mixer or a whisk until the gelatin is completely dissolved in the milk.
  4. Add sugar and vanilla essence: Add sugar and vanilla essence to the milk gelatin mixture and keep beating.
  5. Cool the "room": When all ingredients are well mixed, place the "cream" in the refrigerator. Let it cool there for about an hour and a half.
    • It is important to stir your "cream" every ten minutes while it is in the refrigerator.
  6. Further cooling in a bowl with cold water: After an hour and a half, remove the "cream" from the refrigerator and place the bowl of "cream" in a larger bowl filled with ice-cold water. Cool for another 30 minutes and stir frequently.
  7. Beat the cream: After 30 minutes, remove the bowl of "cream" from the bowl of ice-cold water. Beat the "cream" with an electric mixer on the highest setting until it becomes thick and fluffy.
  8. Add a flavor: at this point you can add extra flavor to your whipped cream if you wish.
    • Chocolate: add a tablespoon of cocoa or a little melted chocolate to the "cream" mixture. Stir until well blended.
    • Lemon: add 1/2 tablespoon of freshly grated lemon zest.
    • Cinnamon: sprinkle a teaspoon of cinnamon over the cream for a warmer flavor.
    • Maple Bacon: add 1/4 cup of bacon and a tablespoon of maple syrup to the cream for a savory-sweet surprise.
  9. Keep in the fridge: Keep your homemade whipped cream in the fridge until ready to use.

Tips

  • Try cooling the whisk or beaters of your mixer in the fridge or freezer. That way you cool the cream while you whisk it!

Warnings

  • When the whipped cream has reached the desired thickness, stop beating immediately! If you continue for too long, the whipped cream can curdle or lose its light, airy texture.
