Ingredients for 18 large donuts

For the donuts

  • 120 grams of butter, at room temperature
  • 1 egg
  • ½ teaspoon of salt
  • ½ teaspoon of vanilla extract
  • 150 grams of brown caster sugar
  • 150 grams of vanilla yogurt
  • 120 grams of finely chopped canned pineapple, drained (save the juice)
  • 220 grams of grated carrot
  • 2 teaspoons of cinnamon
  • ½ teaspoon of nutmeg
  • 1½ teaspoons of baking powder
  • 1½ teaspoons of baking soda
  • 200 grams of flour

For the icing

  • 120 grams of cream cheese
  • 4 tablespoons of butter
  • 2 tablespoons pineapple juice (the remaining liquid from the can)
  • 100 grams of icing sugar
  • 60 grams of finely chopped walnuts

To step

  1. Preheat the oven to 190ºC.

Part 1 of 3: Making the dough

  1. Mix the wet ingredients. Beat the sugar with the butter in a large bowl, with a stand mixer or hand mixer.
  2. Add the yogurt, egg and vanilla extract to the bowl
  3. Add the pineapple and carrot last. Mix everything well.
  4. Mix the dry ingredients. In another bowl, put cinnamon, flour, baking powder, baking soda, salt and nutmeg, and stir with a whisk.
  5. Merge the two bowls. Pass the dry ingredients through a sieve with the wet ingredients.
    • If you always sieve small amounts, you will get a better result and you can mix everything more easily.

Part 2 of 3: Baking the donuts

  1. Fill a donut pan. Put the dough in the holes of the baking pan, fill them about half way.
  2. Bake the donuts for 10 minutes.
  3. Let the donuts cool. Let them sit in the baking pan for a few more minutes.
  4. Place the donuts on a rack. Leave them for 15 to 20 minutes.

Part 3 of 3: Making and applying the glaze

  1. Mix all the ingredients for the icing (except the walnuts). In a small bowl, mix all the ingredients with a whisk until you have a smooth mixture.
  2. Dip the donuts in the icing.
  3. Decorate the donuts. Before the glaze hardens, sprinkle some finely chopped walnuts on top.
