Ingredients

  • 1 cup (128 g) of unsweetened cocoa
  • 2 cups (500 g) of sugar or sugar substitute
  • 1/4 teaspoon of salt
  • 2 cups of cold water (500 ml)
  • 1 tablespoon of vanilla

To step

  1. Beat the cocoa, sugar and salt in a saucepan well mixed up. Don't use your smallest pan, but make sure there is enough space for the liquid to boil. By using a larger pan you also prevent the splashes from flying around!
    • To make the syrup less high in calories, you can use splenda or stevia instead of sugar. But beware: if you do this, you cannot bake with the syrup. However, you can use it as a base for chocolate milk or as a sauce over ice cream. Moreover, you cannot use the less calorie-rich version of the syrup for longer than a few days.
  2. Add the cold water. Beat the mixture well until the mixture is smooth and there are no more lumps to be seen.
  3. Heat the liquid over medium heat and bring it to a light boil for 3 minutes. Stir the mixture occasionally, but remove it from the heat after 3 minutes. At this stage, the mixture will not thicken yet, so don't worry if the syrup is still very thin.
  4. While the mixture is cooling, add the vanilla. You can now also taste the syrup to determine whether you want to add a little more salt or some extra vanilla. Just be careful not to burn your tongue!
  5. Pour the mixture into a resealable container or bottle and store it in the refrigerator. If you made the syrup with regular sugar, you can keep it for about a month. All the more reason to try out some delicious chocolate recipes in the coming weeks!
