A brownie is a sweet treat that is now well established in the Netherlands. You can make it for a special occasion, on a dull rainy day, or just because you feel like baking and pamper yourself and your roommates. You can make regular brownies or make them extra chewy and toffee-like, or try another creative variation. Anything is possible when making brownies, and the result is always to die for. Choose a recipe and get started right away.

Ingredients

Simple brownies

  • 55 grams of flour
  • 225 grams of granulated sugar
  • 2 eggs
  • 3 teaspoons of chocolate or cocoa powder
  • 55 grams of butter or margarine
  • 1/4 teaspoon baking powder
  • 170 grams of bittersweet chocolate chips
  • 1/4 teaspoon of salt
  • Icing sugar to taste

Toffee-like Brownies

  • 10 tablespoons (145 grams) unsalted butter
  • 250 grams of granulated sugar
  • 65 g unsweetened cocoa powder
  • 1/4 teaspoon of salt
  • 1 teaspoon of vanilla extract
  • 2 large eggs
  • 70 grams of flour
  • 75 grams of chopped pecan or walnuts

Method 1 of 3: Simple brownies

  1. Preheat the oven to 190ºC.
  2. Grease a square baking pan (23 x 23 cm) and line it to a height of about an inch with parchment paper. You can also cover the mold with aluminum foil.
  3. Melt the butter or margarine in a small pan over low heat. While the butter is melting, perform the following two steps. It should take about two minutes for the butter to melt. The butter will melt faster if you let it come to room temperature beforehand.
  4. In a separate bowl, stir together the icing sugar and the eggs. Place the sugar and eggs in a medium bowl and stir the ingredients together well. This should take about a minute. You can stir the ingredients together with a wooden spoon, a whisk, or possibly an electric mixer.
  5. In a separate bowl, mix the flour and the cocoa or chocolate powder together. Now put these ingredients in a separate bowl and stir until they are well mixed together.
  6. Pour the melted butter into the sugar and egg mixture. Then stir well until the butter is completely incorporated into the mixture. This produces a nice creamy, light yellow mixture.
  7. Sift the cocoa mixture into the egg mixture bit by bit. Place the ingredients in a sieve and gently shake the sieve back and forth to allow air to enter while the cocoa mixture falls into the egg mixture. You can also scrape the bottom of the strainer lightly with a fork to strain the cocoa mixture.
  8. Now add the chocolate chips to the mixture. Now you can add the chocolate chips to the other ingredients. You can take regular chocolate chips, or those nice little mini chips if you want. If you're feeling adventurous and want to mix things up, you can even go for white chocolate chips.
  9. Pour the batter into the baking tin. You greased the tin beforehand and lined it with baking paper, so now you can pour the cake batter in it right away. Use a spatula or knife to smooth the batter. It doesn't have to be perfectly smooth, but try to spread it as evenly as possible over the mold so that the brownies are the same height throughout.
  10. Place the baking pan on the middle shelf of the oven and bake the brownies for 30 minutes. After 25 minutes, keep checking the brownies to make sure they don't burn. You can do the dishes while the brownies are in the oven. And if you keep busy in the kitchen while the brownies start to harden, you will naturally want to taste them even more!
  11. Remove the brownies from the oven and let them cool. Let the brownies cool for at least five minutes. In those five minutes they get the chance to get a little harder. Cutting the brownies while they are still cooling will make it more difficult to cut them neatly.
  12. Cut the brownies into bite-sized pieces. You can cut the brownies into small pieces that you can eat in one bite. You can also cut larger brownies so that each piece forms a tasty portion. The choice is yours - if you're making them for a big event, the smaller the better. But if you just make them for yourself and a few friends or family members, you can of course cut them a bit bigger?

Method 2 of 3: Toffee-like Brownies

  1. Preheat the oven to 160ºC. Place the rack under the center of the oven and set everything up for making extra tasty, toffee-like brownies.
  2. Prepare a square baking tin measuring 8 by 8 inches. Line the bottom and sides of the baking pan with aluminum foil or parchment paper. Let the foil or paper hang over the edge of the mold on two opposite sides.
  3. Pour an inch to 2 inch of water in a medium saucepan. Heat the water until it just starts to boil.
  4. In a bowl, stir together the cocoa powder, sugar, butter and salt. To do this, take a refractory bowl. Stir the ingredients together well. To do this, place the bowl over the gently boiling water to let the ingredients heat up a bit so that you can stir them together more easily, resulting in a nice, creamy mixture. Keep stirring the ingredients until the mixture is nice and smooth and warm. There may still be a few pieces in it; the mixture will smooth out on its own after you add the flour and eggs.
  5. Let the bowl cool for 3 to 5 minutes. To continue using it, the mixture should still be warm, but not hot anymore.
  6. Now stir in the vanilla. Stir the vanilla into the mixture with a spatula or wooden spoon. The vanilla gives the brownies a unique flavor.
  7. Add the eggs. Now add the eggs one by one to the mixture. Make sure the first egg is completely absorbed by the mixture before adding the second egg. This is a trick that will make the batter smoother.
  8. Add the flour. Now stir the flour into the mixture until it is completely incorporated into the batter. This will take at least another two minutes. The batter should be quite thick, probably thicker than the batter for regular brownies, as you are used to - which is how these brownies get their nice chewy and toffee-like texture.
  9. Stir the nuts into the batter. Stir the walnuts, pecans, almonds or whatever nuts you want to use into the batter. You can also omit the nuts, but they do give the brownies a lot more spice.
  10. Pour the batter into the baking pan. Spread the mixture evenly over the bottom of the tin so that your brownies are all about the same thickness.
  11. Place the tin in the oven for 20 to 25 minutes. Keep a close eye on the brownies after about 18 minutes. To check if they are cooked, pierce the center of the brownies with a toothpick and see if it comes out almost clean. If they are not yet cooked, leave them in the oven for a while, even if the official baking time has already passed.
  12. Remove the brownies from the oven and let them cool. Let the brownies cool for at least five minutes before carving.
  13. Cut the brownies. This recipe yields 16 regular-sized brownies, but of course you can cut them into larger or smaller squares (or other shapes), however you like.
  14. Serve the brownies. These so-called fudgy or toffee-like brownies are delicious on their own with coffee or tea, but if you want to make it extra crazy you can also sprinkle them with some caramel sauce.
