Sprouted mung bean is an excellent source of lean protein and fiber. It is also rich in digestive enzymes. Homemade sprouts are much fresher and tastier than purchased ones.   3. 3 Soak the beans overnight in clean water. If you can't soak them overnight, leave them on for at least 7-8 hours.

  4. 4 After soaking, rinse the beans well and drain off the water. The beans should be swollen, firm and slightly sprouted.
