Vegans can enjoy sweet fruit rolls for breakfast or savory rolls as a side dish. Vegan buns are made with vegan butter and soy or rice milk.
Ingredients
Servings: 8 scones
- 1 3/4 cups (402 g) all-purpose flour
- 3/4 cup (172 g) oats
- 1/2 teaspoon (2 g) baking soda
- 2 teaspoons (9.5 g) baking powder
- A pinch of salt
- 3/4 cup (172 g) sugar
- 1/2 cup (115 g) cold vegan butter
- 1/2 cup (0.35 L) rice or soy milk
- 1/2 cup fruit or nuts for the filling
- Cooking oil
Steps
1 Preheat oven to 205 degrees C and coat a baking sheet with cooking oil.
2 In a bowl, combine flour, oats, baking soda, baking powder, and a pinch of salt.
3 Add sugar and vegan butter and toss by hand or with a cookie cutter. Stir until the dough is coarse, crumbly.
4 Make a depression in the middle of the dough and add milk. Mix thoroughly.
5 Mix the ingredients for the filling. For example, blueberries can be used for sweet fruit buns, and 1/2 cup cheddar and 2 tablespoons of dill for savory ones.
6 Divide the dough into 8 pieces and roll each piece into a ball. Place the balls on a greased baking sheet and bake for 10 to 15 minutes, until lightly browned.
Tips
- If you are adding fresh tender fruits to the buns, do not over-mix them. For example, if the filling of their blueberries is crushed, the buns will take on a grayish hue and can easily burn in the oven.
- If using sweet fruits such as blueberries as a filling, add 2 tablespoons (30 ml) of lemon juice to neutralize excessive sweetness.
