- To make an egg mixture, combine all dry ingredients: baking powder, baking soda, pepper, and salt in a medium bowl. Add buttermilk, egg, and hot sauce to the dry ingredients.

- When covering the steaks with flour a second time, make sure they are completely covered and evenly coated. To get a good crust, you need to roll the meat in flour several times.
Method 2 of 2: Searing the steaks and making the sauce
1 As soon as the oil begins to boil, place the steaks in it and fry for 3-5 minutes on each side. Finished steaks should be covered with a golden brown crust. Note that thinner steaks will take less time to cook. Place them in a warm oven while you do the following.
2 Mix equal parts butter and flour. Do this at a low temperature to prevent the flour from burning.
3 Add milk, salt and pepper gradually, stirring frequently. Mix until the mixture starts to sit on the back of the spoon. This will take approximately 4-7 minutes. Now you have the sauce!
4 Ready! Serve with mashed potatoes and vegetables or any other side dish of your choice.
Tips
- You can use any tenderloin for this recipe, but if it is not a cube steak, you will need to cut the meat into pieces no thicker than 0.6 cm.
- If you forget to time it (or trust only your own eyes), fry the steaks until each side is golden brown.

- Hot oil can cause burns. Be careful not to let your children be in the kitchen while cooking.
