Durian is a fruit growing in Southeast Asia, which is known for its large size, thick and spiky shell, specific smell and original taste.   5. 5 Split the shell into pieces. After you have cut deep enough along the seams, set the knife aside. Select one of the incisions and insert your thumbs or both palms into it. Spread the adjacent wedges apart to reveal the hard shell and release the edible pulp pod from underneath.

  1. 1 Take out the pulp. After you open the shell at the seams, it will fall into separate slices. There will be edible pulp inside each wedge. If the durian is ripe, you can easily separate the flesh from the shell. Otherwise, use a sharp knife to cut the fibers holding the pods to the shell and remove the pulp.
