You don't need a pan of oil to make crispy chicken wings; you can just bake them in the oven. The secret to crispy chicken wings is to dry them well before adding spices and baking them.
Ingredients
- Quantity: 15 to 30 (0.25 kg per person)

- 1 to 2 kg of medium sized chicken wings
- 30 ml olive oil
- 14 g of salt
- 5 g garlic powder
- 5 g black pepper
- 5 g cayenne pepper
- 15 g unsalted butter, melted
- 1 g cayenne pepper
- 1 g freshly ground black pepper
- 1 g of salt
- 60 ml hot chili sauce

Tips
- Experiment with different herbs. Try some chili powder, rosemary, soy sauce, honey, or lemon pepper (black pepper with dried lemon zest).
- You can prepare the dipping sauce up to a week in advance. Keep the sauce in the refrigerator and warm it gently in the microwave or in a saucepan before serving.
Warnings
- Check the wings regularly when they are in the oven; they can dry out quickly. Covering with a lid or aluminum foil seems like a good solution against drying out, but then the wings won't get crispy.
