Blackberries are in season in the late summer and early fall months and can be found on hedges all over the US and Europe. They are used in desserts, in tea and are used to make jam. Ingredients

To make 4 liters / 6 bottles of wine:

  • 2 - 2.7 kilograms of fresh blackberries
  • 1.1 kilos of sugar
  • 3.3 liters of water
  • 1 packet of yeast (it is recommended to use red wine yeast)

Part 1 of 4: Preparation

  1. Hand crush the berries in a sterilized plastic bucket. Pour in 950 ml of chilled, distilled water and mix well. Let the mixture rest for two hours.
  2. Take 1/3 of the sugar, add 1.4 liters of water and cook for one minute. Let the syrup cool.
  3. Add yeast to 120 milliliters of warm (not boiling hot) water and let rest for 10 minutes.
  4. Pour the cooled syrup into the berries. Add the yeast. Make sure the mixture has been allowed to cool properly, as too high a temperature will kill the yeast.
  5. Cover the bucket with a clean cloth and let it rest in a warm place for seven days.

Part 2 of 4: After seven days

  1. Place the pulp in a cloth made of fine muslin or use another type of fine mesh strainer, squeeze all the way out and, in the case of a cloth, wring dry. Use the pulp as compost.
  2. Pour the filtered juice into a 4 liter bottle.
  3. Add 1/3 of the sugar to 1/2 liter of water again and boil. Let cool before pouring into the bottle.
  4. Close the opening of the bottle with cotton wool and place the opening of a balloon with a hole in it over the neck of the bottle. This allows the CO2 to escape and prevents the wine from oxidizing or harmful things getting into it.
  5. Let the wine rest for ten days.

Part 3 of 4: After ten days

  1. Let the wine run into a jar through a siphon. Sterilize the bottle and then drain the wine back into the bottle.
  2. Put the last 1/3 of the sugar in the last 1/2 liter of water and boil. Let it cool before adding it to the wine.
  3. Close the bottle with the cotton wool and balloon and let stand until the wine has stopped fermenting. Once the fermentation process has stopped, the wine will stop bubbling.

Part 4 of 4: After the fermentation

  1. Let the wine run through a siphon back into a jar.
  2. Sterilize the wine bottles and add a funnel.
  3. Pour the wine into the bottles through the funnel and fill each bottle up to the neck.
  4. Cork the bottles of wine and save they.

Tips

  • When picking blackberries, you should only pick those blackberries that are completely black and firm. Unripe blackberries will not ripen after they have been picked.
  • It is imperative that your tools are cleaned and sterilized or your wine will go bad.
  • It is best to drink berry wine the same year, but it can also be left to mature for a maximum of two years.
