Pap is a traditional South African dish. A properly prepared dish tastes great and leaves a feeling of fullness and satisfaction for a long time. Usually dad is served with tomato sauce or spicy African vegetable chakalaka salad. This dish breaks down all racial and cultural barriers. Papa used to be a staple dish for many Africans, but in the 19th century, white settlers adopted the recipe with minor changes. This is a fairly simple dish that can be prepared very quickly.

Ingredients

Dad

  • 2 - 2 1/2 cups water
  • 1 teaspoon salt
  • 2 - 3 cups cornmeal
  • A small amount of butter

Garnish

  • 2 onions
  • 2 tablespoons olive oil
  • 20-30 halves of small pink tomatoes
  • 1/2 cup dry white wine
  • 2 teaspoons Worcester sauce
  • 3 tablespoons chopped greens
  • 2 teaspoons brown sugar
  • 1 teaspoon salt
  • A small amount of ground pepper.

Sauce

  • 1 apple
  • 1 head of sweet onion
  • A few cloves of garlic
  • 2 tablespoons olive oil
  • 1 tablespoon sugar
  • Small can of tomato sauce
  • 2 tablespoons soy sauce
  • A pinch of salt and pepper.

Steps

Part 1 of 3: Cooking the Dads

  1. 1 Take an aluminum pot. Place it on the stove. Turn the stove to medium heat. Before proceeding directly to the cooking process of this dish, heat the pan.
    • If you are cooking on a gas stove, turn it on over medium heat. A gas stove heats up much faster than an electric one.
    • You can also use a saucepan made of another material, such as copper or steel. However, aluminum conducts heat well, so food in these pans cooks very quickly.
  2. 2 Pour water into a saucepan. You can use tap water or purified water. Pour about 2 - 2 1/2 cups of water (500-600 ml) into a saucepan. Bring water to a boil. Add one teaspoon of salt.
    • Make sure that the water does not boil away. If you are using a low-rise saucepan, reduce the heat, or if necessary, pour some water from the saucepan into the sink.
  3. 3 Add cornmeal to water. You will need 2-3 cups of cornmeal. Add cornmeal to boiling water. Cover the pot with a lid. Reduce heat to medium heat.
    • If you are cooking on a gas stove, reduce the heat to medium heat.
    • If you don't have cornmeal, use rice or other cereals.
  4. 4 Stir in the cornmeal. After adding the cornmeal to the water, bring it to a boil and cook for five minutes, covered. Then remove the cover. Stir the cornmeal well to distribute the heat evenly throughout the dish. You can add a little butter to enhance the flavor of the dish. Place a lid on the saucepan and reduce heat to low.
    • If you don't have butter, you can use margarine.
    • Your dish should not be too thick or liquid. Take some cornmeal in a spoon and tilt it over the pot. If the flour runs off the spoon slowly, it is a good consistency.
  5. 5 Cook the dish for another half hour. Remove the lid once or twice to interfere with the dish. After that, cover the pot with a lid as soon as possible. It may take you less than half an hour to prepare this dish. Make sure your dad doesn't get burnt.
    • Open the lid slightly if necessary. However, the pan should not be open for long, no more than one minute. Then put the lid back on the pot.
    • You can also add butter at this stage if the dish is too runny.
  6. 6 Turn off the stove. Remove the pan from the heat and put it in a safe place to cool down. Leave the lid on before serving. Serve with meat and vegetables. Don't forget to put in a large spoon.
    • Be sure to place a rack under the pan when serving, as it will be too hot.
    • It is better to wait a little for the dish to infuse. Chances are, you want the dad to be juicy. If you remove the lid immediately after cooking, you may not be able to get the desired result as the dad will dry out.

Part 2 of 3: Preparing the side dish

  1. 1 Chop two red onions. Place the onion in a skillet with two tablespoons of olive oil. Place the skillet on the stove and turn on medium heat.Saute the onions until they are translucent. Stir constantly to distribute the heat evenly.
    • You can use sweet white onions instead of red onions.
    • If using a gas stove, reduce the heat to low. Gas stoves heat up much faster than electric stoves.
  2. 2 Mix the remaining ingredients. While the onions are pan-fried, combine the remaining ingredients in a bowl. Combine 20-30 halves of small pink tomatoes, 1/2 cup dry white wine, 2 teaspoons of Worcestershire sauce, 3 tablespoons of chopped herbs, 2 teaspoons of brown sugar, 1 teaspoon of salt, and some ground pepper. Mix the above ingredients well using a spoon or hand.
    • Be careful not to crush the tomatoes. They must remain intact in your dish.
    • Use parsley, rosemary, basil, or thyme. Follow your taste preferences and use whichever greens you like.
  3. 3 Add the prepared mixture to the onion skillet. Once the onions are translucent, add the prepared mixture. Mix all the ingredients with a spoon. Cover the pan with a lid. Reduce heat to low.
    • If the contents of the pan start to stick to the bottom, add more olive oil.
  4. 4 Continue cooking the side dish. Do this for about one hour. Stir the ingredients well every 10 minutes. Once you've done this, quickly put the lid on the pan. Turn off the heat after an hour.
    • Make sure that your food does not burn. Pay special attention to the condition of the tomatoes. If you see that the dish is ready, turn off the heat.
  5. 5 Remove the pan from the stove. Place it in a safe place to cool the garnish. Spoon the garnish next to or directly on top of the dads. Garnish with fresh herbs such as parsley, oregano, or basil.

Part 3 of 3: Making the sauce

  1. 1 Prepare the basic ingredients needed to make the sauce. Use a sharp knife to remove the skin from the apple and grate it. Chop the onion finely and crush a few cloves of garlic. Combine apple, onion, and garlic in a bowl. Mix the above ingredients well.
    • Make sure that the mixture does not acquire a mushy consistency. The sauce should be thick. However, be careful not to turn it into ketchup.
  2. 2 Turn the stove to medium heat. Place the skillet on the stove top and pour about two tablespoons of olive oil into it. When the pan is hot, transfer the above ingredients to it. Stir well to distribute the heat more evenly.
    • If you see that the obsessed pan starts to stick to the bottom, add more olive oil.
    • If you are cooking on a gas stove, reduce the heat to medium heat.
  3. 3 Add additional ingredients. Add 1 tablespoon sugar, a small can of tomato sauce, and 2 tablespoons of soy sauce to the skillet. Season with salt and pepper. Remember to stir while adding ingredients.
    • Use thick tomato sauce to give the dish the desired consistency.
    • If you don't like soy sauce, use Worcestershire instead.
  4. 4 Continue making the sauce. Reduce heat to low. Continue cooking, making sure to stir the ingredients constantly. Turn off the stove after 10 minutes. Place the pan in a safe place to cool.
    • Add olive oil if you see the contents of the pan sticking to the bottom.
    • If you see the contents of the pan start to burn, immediately remove the pan from the heat.
    • Open the lid slightly if necessary. Let the steam come out and then cover the pan with the lid again.
  5. 5 Serve the sauce. Pour the prepared sauce over the dads or serve next to your main course. Garnish with fresh herbs and spices. You can also garnish the dish with vegetables such as tomatoes.

Tips

  • Remember to stir when adding ingredients to distribute the heat more evenly.
  • Season with salt and pepper for a delicious meal.
  • Add vegetables and meats to enhance the taste of the dads.
  • Stir the cornmeal constantly with a large wooden spoon to avoid clumping.

Warnings

  • Make sure that the food does not burn. Stir constantly until the dish is completely cooked.
  • Be careful when cooking on a hot stove. Do not touch the pot with your hands. Use potholders.
