Puto is a small Filipino steamed cake made from rice flour (called galapong). This cake is usually eaten for breakfast with coffee or hot chocolate milk. Some people also like to add grated coconut on the cake or eat with dinugan - Stewed pig's blood. If you want to make your own puto then check out the instructions below.

  • Preparation time: 20 minutes
  • Processing time: 20 minutes
  • Total time: 40 minutes

Resources

  • 4 cups of rice flour
  • 2 cups of sugar
  • 2.5 tablespoons of floating flour
  • 2 cups coconut milk
  • 2.5 cups of filtered water
  • 1/2 cup melted butter
  • 1 egg
  • Cheese put on the cake
  • Food coloring (optional)
  • 1 tablespoon flour (optional)

Steps

  1. Sift the dry ingredients together. Sifting rice flour, sugar and baking powder will help you mix the dry ingredients evenly, avoid clumping and let the ingredients air. Just pour the ingredients into the bowl through the sieve, add a brush to the bottom of the sieve while the ingredients fall to make it easier to sift the ingredients. Mix the ingredients well.
    • If you don't have rice flour, you can substitute it with plain flour, but it won't look like a traditional rice cake.
    • If you really want to make a puto, stir the rice flour with water in the bowl, cover and let it sit at room temperature overnight. If you do this, you will need to stir about 450g of rice flour with 1/2 cup of water.

  2. Add butter, coconut milk, eggs and water and mix well. Use a wooden spoon, whisk or whisk to mix ingredients well. If coconut milk is not available, you can replace it with more than twice as much condensed milk, or you can use plain milk, but you won't get the traditional flavor of puto.
    • If you want to make the puto more chewy, you can add 1 tablespoon of flour in the flour mixture.
    • Although food coloring is not strictly necessary, it will give the cake a nice color. Some of the most common colors of the puto are green, yellow or purple. If you want the cake to be colorful, divide the dough into four parts and add 1-2 drops of the unique color to three parts; you may not be able to add color to a portion of the powder for a nice contrast with the "white" color.

  3. Pour the flour mixture into a mold and small cupcake tray. If you don't use a cupcake paper cup, you can spread the butter in the mold to keep it from sticking. You will pour the mixture into full or slightly full mold. The cake will swell while steaming, so you need to create room for it to swell. Some people even advise you to only pour about 3/4 of the mold.
  4. Put the cheese on top of the dough. Cut cheese into small squares, about the size of 0.5 dollar bronze, only slightly bigger than 25 cents. If you are using regular cheeses, you can place them in the mold before steaming. However, if you are using melty cheese, add it only when it is almost finished steaming, ie 2 minutes before finishing. That is the amount of time you need to melt melted cheese.
  5. Prepare to steam. Make sure to add enough water to the steamer and get ready to steam the cake. You can coat a thin cloth to protect the cake mold and use extra cloth to cover the steamer. Or you can use the regular lid to cover the steam bath. Start preparing the steamer as you mix the ingredients to save time.
  6. Place the cake mold in the steaming tray and steam for about 20 minutes. You can check the cake after steaming for 10 minutes. When you use a toothpick to pin the cake and find that the toothpick is not wet, the puto is done steaming. Just make sure to add 2 minutes of steaming before finishing if you add melted cheese to the cake.
  7. Remove the puto from the mold. Allow the cake to cool for 1 or 2 minutes before taking it out. When the cake is less hot, you can arrange a plate.
  8. Enjoy. This cake is delicious while still warm, so you need to enjoy it immediately. You can eat puto at any time, but many people like to eat cake while enjoying coffee. You can also eat with dinugan - Stewed pig's blood if you like. advertisement
