Method 2 of 3: Vegetable Cabbage Soup
Stir fry potatoes. Pour olive oil into a large saucepan and heat for 1-2 minutes. Place the potatoes and salt in a saucepan and stir until the olive oil is evenly covered. Fry until soft (about 10 minutes).- Don't overcook potatoes as you will also cook with other ingredients.

Add broth and tomatoes. Pour the broth and tomatoes into a saucepan and bring to a boil, then lower the heat to simmer. Stir constantly so that the vegetables don't stick to the bottom of the pan.
Add cabbage and spices. Continue cooking until the cabbage is tender (about 15-20 minutes). Taste and add seasoning if desired.

Advice
- The cabbage will look a bit full when you add it to the broth and water, but after that, the cabbage will flatten so you don't need to worry about the pot filling.
