Thai iced tea is a wonderfully refreshing blend of black tea, condensed milk, sugar and various spices. There is no set recipe to stick to for this bittersweet summer drink, but in this article we'll give you a few variations.

Ingredients

Traditional Thai iced tea

  • 50 grams of black tea leaves
  • 1.4 liters of boiling water
  • 115 ml of sweetened condensed milk
  • 85 grams of sugar
  • 235 ml of coffee creamer, whole milk or coconut milk
  • Star anise, ground tamarind and cardamom to taste

Thai iced tea as you get it in a restaurant

  • 700 ml of water
  • 15 grams of Assam tea leaves
  • 4 green cardamom pods
  • 3-4 cloves
  • 1 star anise
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon anise powder
  • 2 tablespoons of sugar
  • 30 ml of sweetened condensed milk
  • 45-60 ml of coffee creamer

Method 1 of 2: Traditional Thai iced tea

  1. Place the tea leaves and spices in boiling water for 5 minutes. Pour the water through a colander to remove the leaves.
  2. Add the sugar and stir until it dissolves. Add the condensed milk, close the teapot and let it cool to room temperature.
  3. Pour the tea into a tall glass with ice cubes. Pour the tea over the ice, but leave some space in the glass.
  4. Fill the glass with coffee creamer, whole milk or coconut milk. Serve immediately, without stirring.

Method 2 of 2: Thai iced tea as you get it in a restaurant

  1. In a medium-sized saucepan, bring water to a boil. Place the tea leaves, cardamom pods, cloves and star anise in a tea bag or tea infuser.
  2. When the water is boiling, you can turn the heat down to just keep it boiling. Put the tea infuser or tea bag in the pan, make sure it is completely submerged.
  3. Let the tea steep for 5 minutes. Then remove the tea bag or tea egg from the pan and add the anise powder, vanilla extract, sugar and sweetened condensed milk.
  4. Stir the tea until the sugar is dissolved and then let the tea cool to room temperature.
  5. Pour the tea into a tall glass with ice cubes. Pour the tea over the ice, but leave some space in the glass. Fill the glass with coffee creamer, whole milk or coconut milk. Serve immediately, without stirring.

Tips

  • The black tea is allowed to get quite strong as it is diluted with milk / cream. You can also use tea bags instead of loose tea leaves.
  • If you want to make it a little healthier, you can replace the condensed milk with whole milk.
