Fried rice with chicken is a popular Chinese dish. It's a fun recipe to make at home because you can use all kinds of leftovers such as cold rice, eggs, chicken pieces and frozen or fresh vegetables. Follow the steps in this article to make this delicious dish.

Part 1 of 5: Making the rice
Take 600 grams of white boiled rice. You can use it straight from the fridge for this recipe.
- When you have run out of cooked rice, bring 480 ml of water to a boil and add 380 grams of basmati rice. Put the lid on the pan and turn the heat to low. Let it boil for 20 minutes. By the end of the cooking time, check that the rice is not sticking. Set it aside for five minutes, then loosen it with a fork. Place the rice on a baking tray to cool until it is at room temperature.
- You can also use a rice cooker to make the rice faster. When ready, place it on a baking tray or in the refrigerator to cool.
- When you have run out of cooked rice, bring 480 ml of water to a boil and add 380 grams of basmati rice. Put the lid on the pan and turn the heat to low. Let it boil for 20 minutes. By the end of the cooking time, check that the rice is not sticking. Set it aside for five minutes, then loosen it with a fork. Place the rice on a baking tray to cool until it is at room temperature.
Part 2 of 5: Baking the chicken
Finely chop 1 small onion and 2 cloves of garlic.
Remove a pack of frozen peas or carrots from the freezer.
Garnish with sliced spring onion. Serve immediately.
