Are you looking for a cake that really belongs to Christmas? Try the following recipe for making a traditional English Christmas cake, with fruit in alcohol and almonds. You can bake this cake days before Christmas.
Ingredients
For the cake:
- 28 g almonds
- 227 g currants
- 227 g golden raisins
- 227 g raisins
- 28 g glazed cherries, quartered (or Maraschino cherries)
- 57 g mixed candied peel
- Grate of 1 lemon zest
- Grate of 1 orange peel
- 3 tbsp. good brandy
- 1 cup of plain flour
- 1/2 tsp. salt
- 1/2 tsp. for all herbs / spices
- 1/4 tsp. nutmeg
- 1 cup brown sugar
- 1 tbsp. molasses
- 1 cup butter, softened
- 4 eggs, room temperature
For the topping:
- 200 g marzipan
- 1 to 2 tbsp. warm apricot jam
- 3 proteins
- 600 g icing sugar, sifted
- 1-1 / 2 tsp. liquid (optional)
- 1 tbsp. lemon juice, freshly squeezed

Tips
- Treacle is a syrup made during the processing of sugar, similar to Gouda syrup and molasses. If you can't find a treacle, replace it with an equal amount of molasses. Gouda Syrup is somewhat thinner and can change the batter.
