  • You can use most types of beans for this recipe. However, if you want to use dried kidney beans, do them not right in the slow cooker. Kidney beans are high in phytohaemagglutinin, a lectin that makes you sick. To safely place dried kidney beans in the slow cooker, pre-boil them in a large amount of water for 12 minutes, then rinse and put them in the slow cooker.
  • You don't necessarily have to put tomatoes in the chili con carne. If you're allergic or want a different flavor, replace the tomato juice with beef stock or another liquid.
  • Some hot peppers are hotter than other peppers. Be careful when choosing peppers. If you are using very hot peppers, add a small amount without the core and seeds first. You can always add more later.
