Liquid smoke flavor can be added to your food to give it a smoky flavor without actually smoking it. There are all kinds of ready-to-use products with which you can do that, but you can also learn to make your own liquid smoke flavor. If you can make your own liquid smoke flavor, you will have the same taste, but without added chemicals and flavorings, and it is a lot cheaper.

  1. Fill your barbecue with wood chips of your choice and grill your food on it. Do not use liquid or firelighters to start the fire. If you use chemicals, they end up in the end result, and it is not safe to eat.
  2. Then remove about 500 grams of wood chips from the barbecue that have not completely burned out. Fish it out and try to avoid adding ashes.
  3. Fill a pillowcase with the wood chips. Get a pillowcase that you won't need after this, because once the process is done, you won't be able to use it.
  4. Bring a pan of water to a boil. You need enough water so that the wood chips are completely covered.
  5. Place the pillowcase with wood chips in the boiling water and let it stand for at least 30-45 minutes. When the water is dark red-brown, you can remove the pan from the heat, because then you have removed enough material from the wood chips.
    • Preferably boil the water outside. It is better to do this step outside as it can smell very strong inside.
  6. Let the pan of water sit until it cools enough to touch.
  7. Remove the pillowcase with wood chips from the water. Squeeze the water from the pillowcase and discard the wood chips.
  8. Bring the reddish brown liquid back to a boil and let it thicken to 1/3 of the original amount. This is how you concentrate the smoke aroma.
  9. Let the liquid cool and put it in a bottle.
  10. Taste the end result. If it tastes bitter, add a little honey.

Tips

  • If you can get more than 500 grams of wood chips from your barbecue, you can make more liquid smoke flavor.
  • You must first have grilled with the wood chips, otherwise you will not get a smoky taste.
  • Wood chips from oak work best.
