Macarons are super popular French cookies. They have a wonderfully crispy outer layer and a soft filling in the middle. It's important to maintain the crispness of the outside when you store macarons, as they can get soggy quickly. Always put the cookies in an airtight container for safekeeping. If not kept in the refrigerator, they should be eaten within 24 hours. They will stay fresh for up to 3 days in the refrigerator. You can also store macarons in the freezer for up to 6 months.

Method 1 of 2: Keep purchased macarons

  1. Store macarons in a storage box with an airtight lid. A plastic or glass storage box is best for this. Make sure the storage box is clean and dry. Make sure the lid is snug, as even a tiny amount of air can make the macarons stick.
    • Sealable plastic bags are also an option, but because macarons can crumble quickly, it is better to use a storage box with a hard lid.
  2. Arrange the macarons in a row or in layers in the storage box. Place the macarons side by side in a single layer in the storage box. They may touch, but should not overlap. If you have more macarons you want to keep, tear off a piece of parchment paper and place it on top of the first layer of cookies. Place the next layer on top of the baking paper.
    • Keep alternating between baking paper and cookie layers until you run out of macarons.
    • Make sure to use baking paper and not wax paper. Wax paper will stick to the cookies and create a mess.
  3. Eat the macarons within 24 hours if you don't put them in the fridge. Out of the fridge, macarons will stay fresh for about a day. If you think you can eat them within that time frame, put the storage box in your pantry or on the counter. Keep the cookies out of direct sunlight.
  4. Eat cookies that have been kept in the refrigerator within 3 days. Place the storage box in the center of the refrigerator, where the temperature will remain consistent. Do not keep the cookies close to the front of the refrigerator or in the door, as the temperature varies in those places. Make sure there are no heavy objects nearby that could hit the storage box.
  5. Freeze the cookies for between 3 and 6 months. Macarons will keep their flavor and texture in the freezer for up to 3 months. After that, their quality will start to deteriorate, but they will still taste quite good for up to 6 months in the freezer. Place the storage box close to the back of the freezer to avoid fluctuating temperatures. Give the storage box some space and don't put or put anything large or heavy next to it.
  6. Let the macarons thaw for 30 minutes before serving. When you're ready to eat your chilled or frozen cookies, take the storage box from the fridge or freezer and let it sit on the counter for about half an hour. Let the macarons come to room temperature before serving.

  3. Alternatively, freeze the macaron shells for filling later. You can keep unfilled macaron shells frozen for about 3 months. When you're ready to finish the cookies, remove the shells from the freezer and let them sit at room temperature for 30 minutes. Then you can add your filling and assemble the cookies.
  4. Place the finished macarons in an airtight container. Use a plastic or glass storage box and check that the lid closes properly. Place the cookies in rows next to each other, one layer at a time. Place pieces of parchment paper in between the layers.
  5. Leave them on the counter, chill them in the fridge, or freeze them. Leave the cookies on the counter if you plan to eat them in a day. Leave them in the refrigerator for up to 3 days. You can also keep the cookies in the freezer for 3 to 6 months.
    • If you keep them in the fridge or freezer, place the storage box in the center or near the back of the fridge or freezer. Do not put the storage box close to the front or door, as the temperature will change there and will cause the cookies to become soggy.
