Adding carrots to cake recipes gives the cakes moisture and also adds nutrients. You can chop the carrots using either a grater or food processor; the process is no different from chopping it for salads.

Steps

Method 1 of 2: Grinding carrots

  1. 1 Peel the carrots.
  2. 2 Hold the grater in your non-dominant hand and the peeled carrots in your dominant hand.
  3. 3 Place the carrots against the smallest side of the grater. Press the entire length of the carrots into the grater.
  4. 4 Rub the carrots down. Keep fingers and hands away from the sharp edges of the grater.
  5. 5 Discard the carrot piece when it gets so small that you can no longer grab it and chop it.
  6. 6 Repeat the process with additional carrots until all of the carrots are chopped up.
  7. 7 Add the carrots to the cake batter according to the directions in the recipe.

Method 2 of 2: Chopping carrots in a food processor or blender

Using a food processor or blender is far less time-consuming than grating carrots by hand.

  1. 1 Place the peeled carrots on a cutting board and cut each into three or four pieces. Small chunks will be easier to recycle with a food processor or blender.
  2. 2 Place the carrot chunks in a food processor or blender. Attach the cover securely.
  3. 3 Turn on the machine and chop the carrots until they are the size and texture you want. Don't chop the carrots for too long, or they will turn into puree. You want your carrots to look like coarse sawdust or pencil shavings.
  4. 4 Remove the lid and use a plastic spatula to place the carrots in the cake batter. Add the carrots to the cake batter according to the directions in the recipe.

Tips

  • Store your carrots in the refrigerator by wrapping them in a paper towel and placing them in a resealable plastic freezer bag. Carrots will keep in the refrigerator for up to one month.
  • Choose carrots that have a uniform color and no cracks in the skin.
  • Do not use carrots that have spots or dents, or dull carrots.
  • The thicker the carrot, the easier it is to grind it by hand.
  • For long-term storage, cover the carrots with sand and store in a dark, well-ventilated place.

Warnings

  • Do not store carrots near fruits such as apples or pears. Apples and pears give off ethylene gas when ripe, which can accelerate the decay process and spoil carrots.
